MASHAWI (pronounced Maa-shaa-wee) is the Arabic word meaning any meat or vegetable that can be barbecued on an open fire. The most common types of meat used are lamb, beef and chicken. Anyone trying to describe the flavor of Mediterranean cuisine would start by mentioning the distinct flavor that comes from the unique marinade and blend of herbs and spices typically used in our Mashawi.
